I am a sucker for Banana Bread but I need lower carb and gluten free! This is such a yummy one so here is how I make it!!
INGREDIENTS
- 3 ripe bananas
- 2 eggs
- 1/4 cup sugar free maple syrup
- 1 tsp vanilla extract
-1 cup almond flour
-2 scoops tasteless protein powder by Feel Good - 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon and nutmeg (or measure with your heart if you know you like more)
- Pinch of salt
- Optional mix-ins: chopped nuts, chocolate chips (I didn’t go there this time)
MAKES 12 55 gram servings 108 cals per serve
CARBS 9 grams
FAT 6 grams
PROTEIN 6 grams
Instructions:
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add eggs, honey or maple syrup, and vanilla extract to the mashed bananas. Mix well.
- In a separate bowl, combine almond flour, protein powder, baking powder, baking soda, cinnamon, and salt.
- Slowly add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
- If desired, fold in chopped nuts or chocolate chips for added texture and flavor.
- Pour the batter into the greased loaf pan and spread it evenly.
- Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
